 Banana Pudding Brownies

Ingredients

Brownie Layer

  • ½ cup (113 g) unsalted butter

  • 1 cup (200 g) granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ⅓ cup (40 g) unsweetened cocoa powder

  • ½ cup (65 g) all-purpose flour

  • ¼ tsp salt

  • ¼ tsp baking powder

Banana Pudding Layer

  • 1 box (3.4 oz / 96 g) instant vanilla pudding mix

  • 1½ cups (360 ml) cold milk

  • ½ cup (120 ml) cold heavy cream

  • 1 cup mashed ripe bananas (about 2–3 bananas)

  • ½ tsp banana extract (optional, for extra flavor)

Topping

  • 1½ cups (360 ml) heavy whipping cream

  • 3 tbsp powdered sugar

  • ½ tsp vanilla extract

  • 1 cup vanilla wafers, crushed (plus whole wafers for garnish)

  • 1–2 ripe bananas, sliced (for garnish)


Method

1. Make the Brownie Layer

  • Preheat oven to 175°C (350°F). Line an 8×8 or 9×9 inch baking pan with parchment paper.

  • Melt butter in a microwave-safe bowl. Stir in sugar, then eggs and vanilla.

  • Add cocoa powder, flour, salt, and baking powder. Mix until just combined.

  • Spread batter evenly into prepared pan.

  • Bake 25–30 minutes until a toothpick comes out with moist crumbs. Cool completely.

2. Make Banana Pudding Layer

  • In a large bowl, whisk vanilla pudding mix + cold milk for 2 minutes until thickened.

  • In a separate bowl, whip ½ cup heavy cream to stiff peaks.

  • Fold whipped cream into pudding. Gently fold in mashed bananas and banana extract (if using).

  • Spread pudding mixture evenly over cooled brownie layer.

  • Refrigerate 30 minutes to set.

3. Make Whipped Cream Topping

  • In a chilled bowl, whip 1½ cups heavy cream + powdered sugar + vanilla until stiff peaks form.

  • Spread or pipe over pudding layer.

4. Garnish & Chill

  • Sprinkle crushed vanilla wafers over whipped cream.

  • Top with sliced bananas and whole vanilla wafers (optional).

  • Refrigerate at least 2 hours (overnight is better).

5. Serve

  • Slice into squares with a warm, clean knife.

  • Keep refrigerated until serving.

Don’t slice bananas too early They’ll brown; add just before serving
