📝 Ingredients

  • 4–5 medium fresh beets
  • 1 cup white vinegar (or apple cider vinegar)
  • ½ cup granulated sugar
  • ½ cup water
  • 1 tsp salt
  • ½ tsp black peppercorns
  • 2–3 garlic cloves (optional)
  • ½ small onion, thinly sliced (optional)
  • 1 bay leaf (optional)

👨‍🍳 Instructions

1. Cook the Beets

  • Wash and trim the beets (leave skin on)
  • Place them in a pot and cover with water
  • Boil for 30–40 minutes until fork-tender
  • Drain and let them cool
  • Peel the skins off easily using your hands or a knife
  • Slice or cube as desired

2. Prepare the Pickling Brine

In a saucepan, combine:

  • Vinegar
  • Sugar
  • Water
  • Salt
  • Peppercorns
  • Garlic and bay leaf (if using)

Bring to a boil, then reduce heat and simmer for 2–3 minutes, stirring until sugar dissolves.


3. Pack the Jars

  • Place sliced beets into clean, sterilized glass jars
  • Add onions if using

4. Add the Brine

  • Carefully pour the hot brine over the beets
  • Ensure all pieces are fully submerged
  • Leave about ½ inch space at the top

5. Cool and Store

  • Let jars cool to room temperature
  • Seal and refrigerate for at least 24 hours before eating
  • Flavor gets even better after 2–3 days
