Ingredients

Instructions

Step 1: Cook the Beets

Drain and allow beets to cool slightly. Rub off skins easily using paper towels or your hands. Slice into rounds or wedges.

Step 3: Make the Pickling Liquid

In a saucepan, combine vinegar, water, sugar, salt, peppercorns, and cloves. Bring to a gentle boil while stirring until sugar dissolves.

Step 4: Pack the Jar

Place sliced beets and onions into a clean glass jar or airtight container.

Step 5: Add the Brine

Pour the hot pickling liquid over the beets until fully covered.

Step 6: Chill

Allow to cool completely, then refrigerate for at least 12 hours before serving for best flavor.
