🔥 Cook Time: 10 minutes
🕒 Total Time: About 20 minutes
🍽️ Servings: 2 sandwiches
Ingredients
- 4 slices sourdough or sturdy sandwich bread
- 4 slices cooked bacon
- ½ cup shredded sharp cheddar cheese
- ½ cup shredded mozzarella cheese
- ½ cup dill pickle slices, patted dry
- 2 tablespoons softened butter
- 1 tablespoon mayonnaise, optional
- 1 teaspoon Dijon mustard, optional
- Black pepper to taste
Instructions
1. Prepare the Pickles
Pat the pickle slices very dry with paper towels.
This is important because excess pickle juice can make the sandwich soggy.
2. Prepare the Bread
Spread softened butter over the outside of each bread slice.
For extra crispness, spread a very thin layer of mayonnaise over the buttered side.
3. Build the Sandwich
On the unbuttered side of two bread slices, add:
- Cheddar
- Bacon
- Dill pickles
- Mozzarella
- Black pepper
Spread Dijon on the remaining bread slices if desired.
Close the sandwiches.
4. Heat the Skillet
Place a skillet over medium-low heat.
Allow it to warm for 1–2 minutes.
5. Cook Slowly
Place the sandwiches in the skillet.
Cook for approximately 3–4 minutes per side.
Press gently with a spatula.
The bread should become deep golden while the cheese melts completely.
6. Serve
Remove from the skillet.
Let rest for 1 minute.
Slice in half and serve immediately.
Tips
✅ Pat the pickles dry.
✅ Use medium-low heat so the cheese melts before the bread burns.
✅ Shredded cheese melts faster than thick slices.
✅ Sourdough or Texas toast works especially well.
Spicy Version
Add:
- Sliced jalapeños
- Pepper Jack cheese
- Hot sauce
Ranch Pickle Version
Spread a thin layer of ranch dressing inside the sandwich.
Garlic Butter Version
Mix garlic powder into the softened butter before spreading it on the bread.
Extra Bacon Version
Double the bacon for an ultra-smoky sandwich.
What to Serve With It
Serve with:
- Tomato soup
- French fries
- Potato chips
- Pickle spears
- Coleslaw
- Side salad
- Onion rings
Storage
Grilled cheese is best fresh.
Store leftovers in the refrigerator for up to 2 days.
Reheating
Reheat in a skillet over low heat or air-fry at 350°F for 3–5 minutes.
